Each Officers’ Mess has its own traditions, rules and rituals but you can be pretty sure that one tradition is common to all messes – marmalade at breakfast. Woe betide the cook who runs out of marmalade or failed to cook up a batch in reserve. He’d be as popular as a ‘rat in the ranks’ and probably last just as long.

In many messes the officers will stand on the entry or departure of the Commanding Officer and when visiting another Officers’ Mess it is polite to follow the lead of those present. However, it’s wise to keep an eye on your jam or conserve to ensure no scoundrel from the other regiment tries to help himself to your serve.

Flava just loves Hillfarm products. This 2008 Royal Hobart Fine Foods Awards gold medal winner is a classic creamy hot mustard. It is good in sauces and added to salad dressing. It is a must in the pantry.

Green Peppercorn Seeded Mustard

• Origin: Tasmania

Flava just loves Hillfarm products. This whole seeded mustard is mild and good with cheese or smoked fish.

Our award winning mustards make a pleasing addition to hot and cold meats, smoked salmon, fish and vegetarian fare. Most are salt free like the majority of Hill Farm products. Sweet, mild or hot, in a variety of tastes from an English style Pub mustard to our native Tasmanian pepperberry. The high quality yellow and brown mustard seeds used in our seeded mustards are grown, harvested and cleaned here on our Red Bank farm at Sisters Creek.

Mountain Pepper Mustard

This 2008 Royal Hobart Fine Foods Awards silver medal winning mustard is made from wild pepper harvested in the Tasmanian rainforest. It is a hot sweet mustard uniquely Tasmanian. Flava just loves Hillfarm products.

Hillfarm Tarragon Mustard

This is a smooth mustard made with our own tarragon vinegar. It is nice in mayonnaise or with poultry and smoked trout. Flava just loves Hillfarm products.

Wasabi Mustard

This delicious mustard is the Richard Langdon Trophy best in show winner at the Hobart Royal National Fine Food Awards. It is made with excellent quality Tasmanian wasabi and is sensational with sea food or added to hollandaise sauce. A must try mustard! Watch out you can become addicted; you’ll put it on everything! Preserved Lemons

These lemons will add "oomph" to any meal….middle eastern or otherwise. Can be added to soups, salads, used as base for fish stuffing…the uses are only limited by your imagination.

Chilli Jam

Matchett's Chilli Jam is a sweet chutney made from fresh long red cayenne chilli peppers, garlic, ginger and apples. It is the perfect condiment to serve alongside barbeque foods. It also looks impressive spooned over a large cream cheese ball. Chilli Jam is fabulous served with wedges and sour cream and with grilled cheese on toast. We love it at Flava!

A Flava favourite. Matchetts Quince Paste is made from SA organically grown quinces. This is a fully flavoured paste that spreads superbly with cheese.
