The Indian Light Infantry had a well-earned reputation both on the battlefield and on the polo field. Their Saturday ‘post-polo’ curry lunches were equally renowned for the food and the esprit de corps amongst the attendees. Passing the Regimental Fruit Chutney (always to the left of course) was as important as passing the port. Their famous Fruit Chutney is delicious with curries, cheeses, hot and cold meats.

Ferocious and feared in battle, The Bengal Fusiliers (The ‘Fighting Furys’) fought hard and played harder. Their Tomato Relish enjoyed a reputation not only in their own Officers’ Mess but across the sub- continent. Many a visiting officer was seen to ask Ooujak, the head cook, if there was “any chance of a couple of jars for the men at the front?” This Tomato Relish is delicious in sandwiches and with curries, cheeses and hot and cold meatloaf.
